Savor the Spoonful's '3 Ingredient Almond Flour Peanut Butter Cookies'
For a sweet craving with none of the guilt

Two weeks ago, I saw a picture or video of peanut butter cookies, and that was it, I had to have some of my very own. But low-carb and/or whole-foods healthier.
Believe it or not, you don’t even need a leavener. Something in the peanut butter and the almond flour makes magic. There’s even such a thing called a “2-Ingredient Peanut Butter Cookie,” with just peanut butter and a sweetener.
Science, bitch.
Samantha of Savor the Spoonful makes an easy, one-bowl, three-ingredient batch that I tried just now. The ingredients are: molasses, almond flour, and peanut butter. I would imagine you could sub out peanut butter for any nut butter. (I wonder what these would taste like using my dog’s peanut butter…)
She gives a 10- to 15-minute baking window, strongly suggesting you take the pan out a minute or two before they’re ready, to firm up on the counter. They were falling apart on me after 10 minutes, so I left them back in there for almost five minutes more.
As an added treat, sprinkle sea salt on top while they’re cooling.
I used the smallest ice cream scoop to give the illusion of more.
My husband didn’t seem particularly thrilled with his bite. The texture was off to him, not quite cookie, more almond airy. But then, it’s made with almond flour.
More for me!
Think almond cookies but with dense, gooey peanut butter. I don’t know, I love them. They’ll come in handy when I miss something sweet, or run out of fruit…or want peanut butter cookies without the guilt.
